Veggie bowl with cabbage salad and hummus

Ingredients

Veggie bowl
1 pkg (8 pcs) GRÖNSAKSKAKA vegetable medallions
1/2 cucumber
2 oranges or other fruit
1 pomegranate
65 g lettuce
Red cabbage salad
1/2 kg red cabbage
1 lemon
2 tbsp oil
Salt

Hummus
ca 230 g chickpeas
1/2 lemon juice
1 garlic clove
4 tbsp neutral oil
1 tsp cumin
2 tbsp tahini paste
2 tbsp water
Salt

Step by step:

  1. Begin by preparing the GRÖNSAKSKAKA vegetable medallions according to the package instructions.
  2. Thinly slice the red cabbage, preferably with a mandolin. Mix in lemon juice and oil, and season with salt.
  3. Put all the ingredients for the hummus in a blender and season with salt. Add water if it feels too thick.
  4. Cut the cucumber into long, thin sticks.
  5. Slice the oranges, or the fruit of your choice into smaller pieces.
  6. Peel the pomegranate and carefully remove the seeds.
  7. Place all the ingredients in a bowl and top off with finely chopped parsley for garnish.
