Quick meal idea: garlic shrimp salad

Heat, chop, dress and go! This quick and tasty dish makes a great lunch or light dinner option. When we visited Anikó, she whipped it up in 10 minutes, using the fresh salad ingredients she had to hand and frozen prawns from IKEA, quickly heated up.

Garlic shrimp salad

Makes two servings

500g RÄKOR MED SKAL, frozen shrimps with shells, defrosted.
For a peeled alternative, try RÄKOR UTAN SKAL
3 cloves garlic, finely chopped
2 small lettuces, rinsed and chopped
3 handfuls mixed salad leaves, rinsed
1 handful cherry tomatoes, halved
1 ripe avocado, chopped
4 radishes, sliced
1 tablespoon chopped coriander
Drizzle of olive oil
Squeeze of lemon and lime

1. In a pan, fry the garlic and add the shrimp, cook until heated through.
2. Mix the salad ingredients and warm shrimp in a bowl.
3. Add the squeeze of lemon and lime, the drizzle of oil and the chopped
coriander. Season to taste and enjoy.

I love shrimp, whereas they’re not my husband’s favourite. So when I’m home alone I like to make this as a quick and tasty treat for one
