5 super easy tapas recipes

Get your friends over for a potluck dinner and prepare a few simple accompaniments. These five simple recipes go just as well with barbequed food as crusty bread.

Burrata

What you’ll need:

1 pack of burrata
6 green asparagus spears (finely chopped and lightly cooked)
1 bunch of radishes (finely chopped)
1 rhubarb (finely chopped)
About 3-5 tablespoons of oil
Wild garlic
Salt

How to make it:

Mix the wild garlic with the oil. Add more oil depending on how strong/weak you want the garlic flavour to be. Then pour the oil and wild garlic mixture through a sieve. Mix the wild garlic dressing with the chopped vegetables. Place the burrata in a dish, pour over the vegetable mixture and top it with extra dressing.

Ricotta with caramelised onions


What you’ll need:

5-6 medium onions
Olive oil
Butter
About 250 grams of ricotta
Truffle oil

How to make it:

Chop the onions lengthways. Caramelise them in a saucepan with the olive oil and butter over low heat for about 2-2 1/2 hours, until they turn brown. Put the ricotta in a dish, spread the onion on top and pour over a few drops of truffle oil.

Pea hummus

What you’ll need:

250 grams of peas
40 grams of parmesan
Lemon juice from half a lemon
1 bunch of fresh coriander
1 tablespoon of cumin
100 ml olive oil

How to make it:

Heat the peas in a saucepan (don’t overcook them). Drain them. Blend the peas and olive oil until smooth. Then stir in the other ingredients.

Oven-roasted cherry tomatoes


What you’ll need:

1 pack of cherry tomatoes
Fresh rosemary
Olive oil
Salt
Pepper

How to make it:

Preheat the oven to 180°C. Spread the tomatoes on a baking sheet with olive oil. Put the tomatoes into the oven for about 15 minutes. Fill a jar with the tomato mixture and allow it to rest for at least one day before serving.

Baked chickpeas

What you’ll need:

1 can of chickpeas
Olive oil
Salt
Pepper
Chilli flakes

How to make it:

Preheat the oven to 220°C. Mix all of the ingredients together and spread the chickpeas out in an ovenproof dish. Cook in the oven for approximately 30–40 minutes until crispy.
