Why is it that so many of us fall into a rut when it comes to cooking for ourselves? Just because you’re cooking for one doesn’t mean the meal should be any less fabulous! Just start with a base ingredient that you can use throughout the week. We chose potatoes for their versatility. It might require a little prep work and planning, but our interior designer Lina has some cool ideas to help you out.
A rustic potato salad
Boil a few potatoes (or heat some that are already cooked), and while they’re still warm, slice them and toss with your favorite salad greens, red onion, diced apple, blue cheese, and some mustard vinaigrette. It doesn’t get easier than this.
An updated Swedish classic
In a bit of oil fry some diced potato together with your favourite sausage (or none at all), veggies, salt and pepper. It’s a perfect way to use up your leftovers!
A quick seaside supper
This is one meal that’s big on reward with just a tiny bit of work. Dice some potatoes and fry them in a little olive oil with salt and pepper. Plate them with a bit of marinated smoked salmon, some delicate greens, lemon wedges, and a touch of mustard dill sauce.
The smallest things make the biggest differences in a home cooked meal. For me, it’s all about the sauces. And the more mustard, the better.
A crisp bread sandwich
For a super simple sandwich, top a piece of crisp bread with sliced hardboiled egg, sliced cooked potato, herring, dill, salt and pepper.
A French twist
For serious decadence, layer sliced cooked potatoes, your favourite grated, sharp cheese, spinach and mushrooms in a small casserole dish. Let it bake until it’s bubbly and brown on top.
