Home visit: host a colourful outdoor feast

Put nature on the table
Choose a menu packed with a variety of vegetables and fruit so your table is decorated with lots of colourful food. Keep tableware plain and add a few brightly coloured textiles – green placemats and napkins echo the greenery of the outdoors, and extra cushions add comfort to outdoor furniture. Read on for a favourite recipe from Margaret’s family barbecues…
Margaret’s nutty curry sauce
‘This is a simple, mild sauce that the whole family loves. For a barbecue, we serve it with steamed asparagus and coconut rice, but it can be used as a curry sauce, too.’
Ingredients
1 cup/200g fresh tomatoes, finely chopped
1/2 cup/115g tomato paste
1/2 cup/125g peanut butter
2 cups/500ml water
1/2 teaspoon turmeric
1 teaspoon ground coriander
1/4 teaspoon chilli powder or paste (to taste)
1 1/2 teaspoons garam masala
3 teaspoons soy sauce
1 teaspoon salt (to taste)
1 teaspoon sugar or sweet chilli sauce
2 tablespoons vegetable seasoning
Method
1. Put the tomatoes into a small pot and cook on a low heat for a few minutes.
2. Add the tomato paste, peanut butter and water to the pot. Raise the heat and bring to the boil.
3. Lower the heat, and mix in the turmeric, coriander, chilli powder, garam masala, soy sauce, salt, sugar (or sweet chilli sauce) and vegetable seasoning.
4. Simmer for 15-20 minutes, until the sauce becomes smooth and creamy. You may need to add a little more water if the sauce thickens too much.
