Tasty salad with goat’s cheese, strawberries & pine nuts

Serves 2

What you’ll need:

For the salad

About 150 g mix of curled-leaved endive, rocket and large leaved chicory leaves
150 g strawberries, hulled, rinsed and quartered
30 g pine nuts, toasted
100 g goat’s cheese

For the dressing

1 tbsp. red wine vinegar
2 tbsp. raspberry vinegar
50 ml quality olive oil
½ tsp unrefined or brown sugar

How to make it:

Mix the greens in a bowl.
Add the strawberries, toasted pine nuts and crumbled goat’s cheese.
Mix the ingredients for the dressing in a bowl, or use a clean jam jar to shake together.
Drizzle over the salad and serve.
